Zucchini Brownies

Boo, I missed motivational Monday. I'll make up for by posting something that soothes every ones souls...or at least people who enjoy chocolate.


I adapted the recipe from two recipes I found online. You can find them here and here. I'll let you decide which sounds better, or which one you have all the ingredients for, haha!

Ingredients:
1 cup almond butter
1 teaspoon vanilla extract
1 teaspoon baking soda
1 cup chocolate chips
2 teaspoons cocoa
1 egg
1/3 cup of agave nectar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 3/4 cup of shredded zucchini
1 teaspoon of palm coconut sugar

Directions:
1. Heat oven to 350 degrees
2. Either coat a glass baking pan (9x13) with non-stick cooking oil or pour in 1 tablespoon olive oil and brush around sides and down entire length of pan
3. SHRED Zucchini, you can either do this with a food slicer, a cheese grater or in a food processor. 
4. Mix all of the ingredients in a bowl (EXCEPT the palm sugar, that will be sprinkled on top.)


5. Dump/Scoop (And lick bowl & spoon) mixture into greased cooking pan. This is where you can sprinkle the sugar on top of the mixture before baking.


5. Cook for 45mins




6. Enjoy!


I mean really enjoy! It's guilt free! (ish...a bit high in sugar between the chocolate chips, palm coconut sugar, and agave nectar...otherwise not bad at all!)
