On the Menu:
Taco Soup!
Ingredients:
1 lb of ground beef (Or turkey)
1-14oz can of beef broth
1 can diced tomato (any size-depends on how many tomatoes you like)
1/2 bag of frozen fiesta blend vegetables (Or any blend of vegetables that you would like in taco soup. I just picked the one with the most beans)
1/2 cup of white onion
1/4 cup minced garlic
1 tsp cumin
1 tsp paprika
1 tbs chili pepper flakes
1 tsp cilantro
1/2 cup black beans
1/2 of a green pepper
(optional- 1 avocado)
Time: 30mins
Servers: 6 (About 6 cups)
I am slightly under the weather...wondering if I might be coming down with the hubby's cold :( Either way, lots of drainage and now a sore throat. And the weather...wet and rainy. Normally this doesn't bother me, but when you feel good...it's not as fun.
Soup! I knew soup would be perfect. It's quick easy...I may have over estimated the time it takes to cook.
It's perfect and slightly salty so that also helped my throat a little bit.
Anyway, I'll quit complaining and head to the instructions.
Step 1: Brown the Hamburger
Then Add onion, minced garlic, and seasonings. (I say minced because...I sort of hate peeling and chopping garlic, so I buy the jar stuff that's chopped already hehe) Also Add Green Peppers, and black beans.
Let it cook another 5 minutes.
Then add beef broth, entire can of tomatoes, (do not drain), and vegetables.
Let simmer on low heat for about 10-15mins, let the broth bubble for about 4-5mins and serve!
Top with Avocado and enjoy! It was yummy, yummy! Helped my throat feel better too! The truth is I had intended on making this awesome Low Carb Taco Soup recipe that calls for a bit of a heavy cheese broth. I am trying to stick to my diet that the nutritionist had given me of only 1 serving of dairy a day. So I whipped this up instead. Luckily I had all of the ingredients in my fridge/freezer! And it was relatively cheap. I tend to buy frozen vegetables at Bakers (In some parts of the country it is called Krogers). And their frozen vegetables are usually (if not always) 10 for $10.
It's a pretty versatile meal. You could always drain the broth and put it tacos, or in tortillas for enchiladas. Another option to go along with draining the broth would be to turn it into a taco bake.
To spread the dish farther if you are cooking for more than 2 you can crumble corn chips on top with a little bit of cheese. Pour over brown rice That will definitely stretch the soup farther!
Works great for leftovers! I plan on having this for lunch today over brown rice. (Left over from lunch yesterday!) Plenty of options! I love it!
30 Day Challenge Update: My squat challenge. I finished the 3 other sets of squats while I was cooking dinner last night. After sitting down to eat and watch House Hunters on HGTV (my favorite, 'I'm sick & under the weather show') I realized my booty is kind of sore...but! Here's to another 28 days! 2 sets down this morning..just a few more.
Tomorrow is a rest day! Wawho! LOL
