Paleo, Vegan Peach Ice Cream:: Summer Treat

It's been a LOOOONNNNGGGG time since I've posted a recipe, and tonight is the perfect night to do so. We're still in the beginning stages of summer, but the weather has been unbearably hot. With humidity ranging to, a minimum, 40%, and then just over 90%, it's been miserable. Last night though, I treated myself.

A few months ago....in fact when the weather was still cold outside, I made peach ice. I must have purchased peaches for a dessert or just to eat, whatever the reason, the ones that were left were quickly bruising and losing firmness. After tossing all the ingredients into the blender, I poured it into a Tupperware container and tucked it way in the back of the freezer for a later date.

That's one of the most wonderful things about ice cream, is that it will keep for later.

I unearthed this frozen treasure from the depths of the freezer for a sweet after-dinner treat. It's incredibly easy to make, however, a blender is most definitely required.

Tools:
1 freezer-safe container with an airtight seal
1 blender
1 tsp measuring utensil
1 tbsp measuring utensil
liquid measuring cup

Ingredients:
1/2 cup of canned coconut milk  (I like this brand)
I used roughly 6 peaches but generally recommended serving size is 16 ounces of frozen or 8 fresh peaches. 6 is what I had on hand.
3 tbsp of pure organic maple syrup, or pure vanilla extract (for a different flavor)((Paleo Pro tip: The label must say pure organic maple syrup or pure vanilla extract on the package, otherwise it's not considered paleo.
1 tsp of cinnamon (optional, but mine ice cream tasted delicious)
1 tbsp of lemon juice (not going to lie I can't remember if I added lemon to mine.)

Steps:
Put all of the ingredients into the blender and blend until smooth.
Pour into container
Put the container into the freezer, approximately 2 hours or overnight.
When ready, pull out of the freezer, and ENJOY!

In case you're not convinced that this is a perfect dessert, here are a few more reasons to just add peaches into your diet.

*Just one small peach has 15% of your daily vitamin C
*Like carrots peaches are rich in beta-carotene. When you consume beta-carotene, your body turns in into vitamin A, one of the major factors for healthy eye-sight
*Helps with digestion! One medium peach is roughly 9% of your daily fiber intake.
*Peaches are rich in vitamin E which is an important antioxidant! It may help with keeping your immune system by widening blood vessels to keep blood from clotting inside.
*High in potassium! Did you know that your body needs 4,700 mg of potassium every day?? That seems like a lot. 1 peach has 250 mg.
