"Energy" Bites

When I was at my last race they had these amazing protein balls but they included raisins, I'm pretty sure. It lead me on a quest to discover protein bites, or energy bites. Instead of buying quest bars (Don't get me wrong, I LOVE my quest bars, but I'm also VERY interested in making my own!)

I am also looking for a more natural, PCOS friendly, way of creating more energy before my workouts & for the that "mid-afternoon" slump.

I have found a lot of recipes online for energy bites and concocted this recipe.

Ingredients:
1 cup dry (gluten Free *optional*) oats
1/3 cup chocolate chips (I used the enjoy life mini chocolate chips. I found mine at Bakers in the organic/allergen friendly section)
1/4 or 1/3 cup of ground flax seed
1/3 cup honey
1/2 cup peanut butter
1 scoop whey protein (I used Yoli Chocolate Yes)

Dump all ingredients in a bowl and mix together. I recipe I found online called for a 1/2 cup of ground flax seed...after making my bite size "energy" balls. 
I mixed it at first with a spatula then finished by hand mixing. I used a a spoon and my hands to make about 20 bite size balls.

They are a little flaky, that's why you can see the crumbs. I will say that I'm not sure if it was the 1/2 cup of ground flax seed I used or if I didn't quite mix it well enough but the bites were slightly flaky, and the ground flax seed wasn't quite mixed throughout and...well...flax seed just isn't that great all by itself. HAHA! That's why in the ingredients list I recommend only using a 1/3 cup or even a 1/4 of a cup. 
And as far as them being energy bites...well they didn't quite do the trick.  I felt like the protein balls I made the other day actually gave me more energy. Could have been mental because they were so delicious but these energy bites are more snack bites. A healthy mix of protein, carbs, and better sugar (the honey vs. white sugar). So, not a total loss, but still not quite what I'm looking for.
