Who knew?? Not I! I did not know that some Vodka's are gluten free! I had no clue. Which explains a lot.
Today's journey starts earlier today where I couldn't figure out what I wanted for dinner. I had stew meat pulled out but both of my crock pot liners, believe it or not, were both dirty. I also didn't feel like peeling the sweet potatoes, the carrots, chopping the celery...I had 4 major errands today & they kept me away from home all day from earlier morning to late tonight.
Pizza...PIZZA Sounded amazing, but that allergen friendly cheese I had been eating, was starting to taste...fake. I wanted something warm to eat. Something saucy with LOTS of taste and comforting.
I was about to break down and buy some boxed gluten/dairy/soy free dough but then it dawned on me that I had crock pot spaghetti squash in the fridge. (Put a small spaghetti squash in a crock pot, with about 3/4 cup of water, turn crock pot on high for 2-3hrs or low for 4-6 hrs ((Depends on your crock pot)) pull from crock pot, split down the middle and scoop seeds out.)
I grabbed some organic, soy free, basil sauce, and a take and bake the hubby...AND some hormone free, no nitrate added bacon!
I had turkey balls I also made yesterday (1lb ground turkey, 2 tbsp coconut flour, 1 small handful of chopped spinach leaves, seasonings of your choice, I added onion, garlic, black pepper, and parsley. 1 egg. ((You can use a flaxseed egg if you avoid eggs)) Form into balls, divide into 12 cup muffin pan, Bake at 350 for 30mins. This recipe leaves my meatball kind of dry but I am working on making them more moist)
Avoiding dairy, I added the nutritional yeast I have in the cabinet. (I'll let you decide if nutritional yeast is Paleo).
Basically it was just the meal I was looking for.
Okay, it's a pretty terrible picture but I was hungry. I was more interested in eating then actually making it look photo worthy. My apologies.
I didn't feel cheated out of a Italian style dinner. I loved it. I will be making this again.
Before I left the store with my sauce, bacon, and the man's take & bake, I asked the checker if they had any gluten free beer. He showed me a couple of different options, I will have to go back & pick up my favorite, Wyder's Pear Ale. The checker said that Red Bridge is also a good choice.
Somehow he brought up gluten free vodka. WAIT...WHAT??? You mean those $1 shots I've bought aren't gluten FREE??? That explains...why my stomach hurts I guess...seriously, I wasn't having much.
Blew my mind...I mean, I've only been at this a year...not seriously, but definitely within the last few months, I've been reading labels, checking facts...making sure it's clean. NO GLUTEN/DAIRY/SOY.
I have SO MUCH TO learn...oddly, I'm not overwhelmed though. I'm not disappointed in myself. In fact, I am grateful. Relieved...excited about this new information.
When under taking a new diet, think of it that way. What else can I learn? You've been eating & not exercising for how long? Then you get mad at yourself for not being perfect in 1 day...1 month...or even a year? Although admittedly...in a year you should probably know more than I do...LOL! Because you are probably doing more research than I am. I'm a little slow & more focused on exercising I guess...still under taking all aspects of clean eating...slightly paleo? Who knows...
But I am figuring it out one day at a time...
OH! Back to the gluten free vodka, the checker singled out Tito's & Monopolowa, but here is a full list of gluten free vodka.
